Golden Tofu & Veggie Scramble (recipe)

Tofu is a food product made from soybeans. It is a popular ingredient in many vegetarian and vegan dishes. Tofu is a great source of protein, iron and calcium, and it is also low in calories and fat, making it a healthy addition to any diet.

What you need (ingredients)

  • 1 tbsp. olive oil
  • ¼ of an onion, diced
  • 2 garlic cloves, chopped
  • 10.6 oz. (300g) chopped mixed vegetables (mushroom, carrot, asparagus)
  • 8 oz. (225g) tofu, crumbled
  • salt & black pepper to taste
  • ½ tsp. ground turmeric
  • splash of tamari sauce
  • 2 tsp. nutritional yeast
  • Additional toppings:
  • ½ avocado, sliced
  • 2 green onions, sliced
  • microgreens

How to make these scramble (how to prepare it)

  • Add the pesto ingredients to a food processor and pulse to combine. Add water as needed to achieve a thick paste-like consistency.
  • Cook pasta according to instructions on packaging.
  • Meanwhile, heat the olive oil in a skillet over medium heat. Add the chickpeas, garlic powder, onion powder, smoked paprika, salt & black pepper. Cook for about 5 minutes, or until the chickpeas are crispy.
  • Mix the cooked pasta with the pesto and toss to combine. Serve the pasta hot, topped with the roasted chickpeas.
