Homemade Pecan Energy Bar (recipe)

Today we have a healthy vegan and paleo snack! Homemade Pecan Energy Bar!

Thanks to the large amount of vitamins B and E present in pecans, this nut is best described as "brain food." Vitamins B and E are known to have a positive impact on brain function. Also, pecans are packed with minerals such as magnesium, iron, manganese and zinc.

This makes this not only an easy snack on the go but also good for you!

What you need (ingredients)

  • 8.9 oz. (250g) medjool dates, pitted
  • 4 oz. (115g) pecans, halves
  • 1.6 oz. (45g) rolled oats
  • 1 tbsp. chia seeds
  • 1 tsp. vanilla extract
  • ½ tsp. ground cinnamon
  • ¼ tsp. salt

How to make these bars (how to prepare it)

  • Preheat the oven to 200°F (90°C). Line a baking sheet with baking paper.
  • Place the dates in a food processor and pulse until chopped and a rough texture forms. Add the remaining ingredients and process for a minute, to form a crumbly dough.
  • Place the dough onto the baking sheet and roll out into a 6x10.5” (15x25cm) rectangle, and cut the dough into 12 even-sized bars.
  • Bake the bars in the hot oven for 30 minutes, just to dry them out a little. Then remove from the oven and set on a wire rack to cook to room temperature before enjoying.
  • Store the bars in an airtight container, in the refrigerator, for up to 1 month.
